What better way to usher in the arrival of Dry January than with some fresh new N/A drinks!?


This month each of our beverage teams have launched a brand new no-proof cocktail and we’ve decided to celebrate the occasion by doing some fundraising for The Recovery Gym by the Portland Alano Club.


We’ll be donating $1 from each of these drinks sold to The Recovery Gym in an effort to support their work helping members of our community break the cycle of addiction.


Yalla


Stirred is the Word

Wilderton Bittersweet Aperitivio. Roots Divino Rosso. Smoked Cherry Syrup



Stirred is certainly the word when it comes to Yalla’s entry in this year’s Dry January Drop.


This drink is like a good playlist - the process of curating the individual pieces results in the final product being much greater than the sum of its parts. This cocktail is deceptively simple… It's just three ingredients. The real mastery is in the selection of those ingredients.


Wilderton’s Bittersweet Aperitivo and Roots Divino Rosso non-alcoholic vermouth are the base here. The Wilderton brings strong citrus notes while the Roots provides aromas of gentian and bitter orange. The two are a natural pair but the real star of the show here is the smoked cherry syrup. The sweet and smoky flavor from this house smoked cherry syrup acts as the perfect bridge between two wonderful products.


The rest is all about execution. The key to any great stirred drink is dilution and temperature. The same applies here and this is a beautiful example of elegant simplicity in beverage development.

Wild Rumpus

Pathfinder. Wilderton Lustre. Orange Juice. Black Walnut Bitters



I struggle to compare Wild Rumpus to another existing drink so I’ll just describe it.


The Pathfinder and Wilderton Lustre create a mildly bitter, herbaceous foundation. The orange juice is acidified in house and brings some sweetness while the black walnut bitters provide a rich, nutty note. All together the drink is a refreshingly unique take on a no-proof cocktail that boasts the complexity you’d expect of a full proof counterpart.


Too often your typical “Mocktail” ends up being an amalgamation of syrups and juices resulting in a sugar laden drink - but not the Wild Rumpus. Like the Wild Rumpus from Where the Wild Things Are this drink embodies imagination and a temporary escape from rules and conventions of what a no-proof cocktail can be.

Home on the Range

Ghia Bittersweet Aperitivio. Dhos Gin. Lime. Grapefruit. Saline



Shalom Y’all’s Home on the Range might just be the most crushable no-proof drink I’ve ever had.


This is the ultimate crowd pleaser… Ghia Original Apéritif and Dhōs Gin Free combine with fresh lime juice, a house made grapefruit cordial, and a touch of simple to make for an absolute patio pounder. I know we’re in the dead of the PNW winter right now but this drink will transport you to the beaches of California. I think the real sneaky part about this drink is the expert use of salt. Just a couple dashes of a saline solution plays so nicely with the grapefruit cordial and lime that it makes all the difference for the overall drinking experience.

Dolly Olive & Bar Dolly


Bushy Tailed

Ghia Aperitivio. Ginger. Lemon



Bushy Tailed is the spritz entry for this year’s Dry January Drop.


Two things really make this drink special… The Ghia and Leitz’s ‘Eins Zwei Zero’ Blanc de Blancs.


If you haven’t tried Ghia, it is bitter and citrusy with just a hint of sweetness to balance it out. It has notes of yuzu, herbs, and florals making it a fantastic base for mixing the perfect spritz. Leitz’s ‘Eins Zwei Zero’ is a phenomenal non-alcoholic white wine from Germany. It is made with riesling and it features notes of tart passion fruit and ripe pear. These two products combine beautifully to make the base of a delicious spritz. We just add some ginger syrup and fresh lemon juice to play a supporting role and that’s it!


If you’d like to try the ‘Eins Zwei Zero’ by itself we’ll be pouring it by the glass at Dolly Olive!
